It is necessary to wash and dry the lemons. Utilize a vegetable peeler to remove the peel from the lemons carefully, ensuring the white pith is avoided. Transfer the peels into a2-quart jar or a similarly sized container with an airtight lid. Please set aside the lemons for future use.
Put the vodka in the jar, seal it, and let it sit at room temperature (out of the sun) for at least four days, preferably a month. (During the first week, the peels will release most of their flavour.)
Pour the vodka through a strainer into a large bowl and discard the lemon peels. After straining the vodka, pour it back into the jar using a little funnel or a glass measuring cup. Seal the lid and store it in the fridge.
As the vodka chills, prepare the simple syrup by combining the sugar and 1 cup of water in a medium saucepan. Heat the mixture slowly, stirring occasionally, until it reaches a simmer. Remove from heat and stir until any remaining sugar is completely dissolved.Cool completely.
Mix the vodka with the simple syrup after it has cooled, and then chill it for at least three hours before serving. For those who wish to have an incredibly cool beverage, transfer the limoncello to the freezer for several hours before serving and moving it back to the refrigerator. (If left in the freezer for too long, it could freeze.)The recommended serving method is in shot glasses or small liqueur glasses. Limoncello can be stored in the refrigerator for a maximum of1 year. (Prolonged freezing could cause it to freeze.)
