Skillet cookies are ideal for laid-back evenings when everyone craves something sweet without the hassle. The batter is mixed in a single bowl and baked in a large skillet, eliminating the need for portioning dough, baking in batches, and lengthy preparation.
An oven-safe skillet is crucial, ideally a well-seasoned cast-iron pan, although a regular skillet or an enameled version will suffice if it doesn't have wooden or plastic handles. Enjoy generous servings of warm cookie scoops with ice cream or whipped cream in bowls, or savor cooled slices like any other cookie.

Ingredients
  

  • 8 tablespoons 113 grams unsalted butter, softened
  • ½ cup 110 grams packed dark brown sugar
  • ½ cup 100 grams granulated sugar
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 ½ cups 192 grams all-purpose flour
  • ¾ teaspoon baking soda
  • ¾ teaspoon kosher salt such as Diamond Crystal
  • 1 cup 140 grams chopped semi-sweet chocolate
  • 1 cup 96 grams whole walnut halves or chopped walnut pieces

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit. In a large bowl, using a wooden spoon or an electric mixer set to medium speed, blend the butter, brown sugar, and granulated sugar until smooth and creamy for about 1 minute. Incorporate the egg and vanilla extract into the mixture and beat until well combined.
  • Incorporate the flour, baking soda, and salt into the butter mixture until combined. Stir in the chopped chocolate and walnut pieces.
  • Evenly distribute the batter into a 12-inch oven-safe skillet. It will be thin. Bake until it turns golden brown and sets, yet retains a slight gooeyness in the center, for about 20 to 22 minutes. Allow it to cool for at least 5 minutes before serving, either warm or at room temperature. While the cookie is optimal when freshly made, any leftovers can be stored well-wrapped at room temperature for up to 3 days.
