Preserved lemon, typically found in the kitchen, effortlessly transitions to cocktails. This concoction is muddled with sugar and fresh lemon slices to extract a gentle bitterness, creating a delicate balance between sweetness, salinity, and acidity. The preserved lemon reappears, joining forces with olives and additional fresh slices to form an edible and aromatic garnish. While it's advisable to utilize the preserved lemon rind and pulp (the pulp contributes extra welcomed salinity and texture),reserve the rind exclusively for the garnish. If you desire to transform this non-alcoholic beverage into an alcoholic one, consider adding a dash of vodka, gin, or, for an intensified lemon experience, limoncello.

Instructions
 

  • Begin by placing preserved lemon, lemon wheels, and sugar in the base of a robust rocks glass. Muddle until the sugar dissolves and the lemon wheels release their juices. Next, add ice to the glass and finish by topping it off with tonic water.
  • For the garnish, skewer a slice of preserved lemon rind, a few olives, and a half wheel of lemon. Thread these components together and add them as a garnish to the drink.
