Creating perfect meatballs is as simple as remembering a basic ratio that you can tweak to match your preferences. Begin with a pound of ground meat—any type will do, even fish if you're feeling adventurous. Mix in ½ cup of bread crumbs for a light texture, a teaspoon of salt, and an egg to hold everything together.That's your essential recipe. From there, you can add pepper, spices, chopped herbs, and minced allium (like garlic, onion, scallions, or shallots) to suit your taste. Finally, cook them by broiling or frying, whichever you prefer.

Ingredients
- 1 pound ground meat pork, beef, veal, chicken, turkey or a combination
- ½ cup panko bread crumbs
- 1 egg
- 1 teaspoon kosher salt more as needed
- Black pepper and/or ground cumin curry powder, chile flakes, garam masala, etc., to taste
- Minced garlic onion, scallions or shallot
- Chopped parsley basil or cilantro
- Olive oil for frying (optional)
Instructions
- In a large bowl, gently mix all the ingredients together. Shape the mixture into 1½-inch balls and place them on a baking sheet.
- Broil the meatballs until they turn golden and firm, about 7 to 10 minutes. Alternatively, you can fry them in oil until they are deeply browned on all sides. Finish with a sprinkle of salt before serving.
