Classic Sherry Cobbler
The combination of sherry, sugar, and citrus in this cocktail offers endless possibilities for customization. Feel free to switch out the sweetener, experiment with different citrus fruits like lemons, clementines, or blood oranges instead of the traditional orange slices, and incorporate seasonal fruits like berries in the summer, plums in the autumn, or jam any time of the year. You can also vary the garnish by using different types of mint or other herbs. With its nutty profile that falls between fino or manzanilla and oloroso, Amontillado sherry strikes a perfect balance in this drink. However, you can mix amontillado with another sherry variety or even explore different types of sherry to suit your preferences.
Instructions
- In a cocktail shaker, muddle the three half-wheels of orange (reserving the remaining half-wheel for garnish) along with the simple syrup. Add the sherry and ice cubes, then cover and shake vigorously.
- Strain the mixture into a chilled highball or Collins glass, and top it with enough crushed ice to create a mound above the rim. (If desired, strain the cocktail again to ensure it's pulp-free.) Garnish with mint leaves and the remaining orange half, and serve with a straw.
Notes
To crush ice without a blender, place cubed ice in a clean canvas or plastic bag. Seal it tightly and, if using a plastic bag, wrap it gently in a cloth napkin or tea towel. Set it on a stable surface and crush the ice into small pieces using a rolling pin. Use immediately.
